Classic Spicy Stir-Fried Pork & Peppers

- 320g Sliced Pork (Pork belly or shoulder works great)
- 150g Green Bell Peppers or Long Green Peppers
Sauce & Oil
- 3 tbsp (45ml) Cooking Oil
- 2 tbsp (36g) Youjia Spicy Sauce
The Perfect Marinade
Don't skip this! Marinating is the secret to restaurant-quality, tender pork.
- A pinch of salt, white pepper, and a splash of cooking wine
- 1 egg white (or whole beaten egg)
- A light dusting of cornstarch or potato starch
- 1-2 tbsp cooking oil (to seal the moisture)

Marinate the Pork
In a bowl, mix the sliced pork with a little salt, cooking wine, and white pepper. Add the egg white and mix well to form a protective film. Fold in a thin layer of starch and let it sit for 10-15 minutes.
Chef's Trick: Once marinated, stir in 1-2 tbsp of cooking oil. This "locks" the marinade in and prevents the meat from sticking to the pan when frying!

Prep the Peppers
Wash the green peppers, remove the seeds, and cut them into chunks or diagonal slices.
Note: Do not cut the peppers too early and soak them in water, or they will lose their flavor. If you prefer less heat, make sure to remove all the seeds and the white inner membranes.

Stir-Fry the Meat
Heat a wok or large pan and add 3 tbsp (45ml) of cooking oil. Once hot, add the marinated pork slices. Stir-fry quickly for 2-3 minutes until the meat changes color and is mostly cooked through.

Add the Sauce & Peppers
Add 2 tbsp (36g) of Youjia Spicy Sauce to the pan. Toss well to coat the pork evenly in the rich, fragrant sauce. Toss in the prepared green peppers and stir-fry for an additional 1-2 minutes until the peppers are tender-crisp. Plate immediately and serve with hot rice!
